STEP 1

Preparare la polenta come da indicazioni riportate sulla confezione. A fine cottura, lasciar raffreddare.

STEP 2

Disporre i filetti di branzino su una pirofila imburrata. Salare, pepare e cospargere di scalogno tritato. Bagnare col vermut e il vino bianco. Passare nel forno caldo ventilato per 8-10 minuti. Togliere il pesce dal suo sugo e tenerlo al caldo.

STEP 3

Far ridurre il sugo in una casseruola a fuoco vivo; quando ne rimarranno solo due cucchiai aggiungere la panna. Portare a ebollizione, unire il burro rimanente mescolando con la frusta, aggiustare di sale e pepe. Tagliare la polenta con un coppapasta, unire i filetti, grattugiarvi sopra il tartufo e nappare con la salsa. Servire.
