STEP 1

Cuocere per qualche minuto un filo d’olio extravergine di oliva, lo zucchero, il succo di limone e la pera tagliata a dadini. Non appena si sarà formato del liquido, unire la fecola di patate e mescolare bene fino a quando non si sarà rappreso. Far raffreddare.

STEP 2

In una terrina unire lo zucchero, la vaniglia e la ricotta setacciata con un colino a maglie finissime. Mescolare bene per amalgamare il tutto. Incorporare attentamente le pere.

STEP 3

Distribuire il composto così ottenuto in bicchieri da cocktail, alternandolo a un cucchiaio abbondante di rose del deserto. 

Riporre in frigorifero per un paio d'ore. Servire o aggiungere a piacimento della panna montata.

Canned sugar 125 g

Pears 2

Vanilla 1 tsp

Potato Flour 3 g

Lemons 1/2 Juice

EVO 1 tbsp

Gluten free Rose del Deserto 50 g
