STEP 1 

Unire la farina per dolci senza glutine, la farina di cocco e il lievito. A parte, amalgamare il burro allo zucchero con una forchetta, aggiungere l'uovo e l'estratto di vaniglia, mescolando bene il composto con una frusta a mano. 

STEP 2

Aggiungere gli ingredienti secchi a quelli umidi, amalgamando bene con una forchetta e, infine, aggiungere il cioccolato a pezzi, le mandorle e le nocciole tritate grossolanamente. Far riposare il composto in frigo per 30 minuti.

STEP 3

Preriscaldare il forno a 180°. Formare i cookies con lo spallinatore per gelato (o a mano, dando al composto la forma di palline), appoggiarli su due teglie ricoperte di carta forno, schiacciandoli leggermente, perché in cottura non cresceranno tantissimo.

STEP 4

Infornare per 15 minuti, togliere dal forno e lasciare raffreddare per qualche minuto.  Servire con una tazza di cioccolata calda o un cappuccino fumante.
