A TRADITIONAL SPECIALTY OF VALTELLINA, ENRICH OUR INSTANT POLENTA TARAGNA BY ADDING FRESH CHEESES SUCH AS BITTO, FONTINA, BRANZI AND FRESH BUTTER AT THE END OF COOKING. IF YOU WANT IT SOFT, ALMOST BY THE SPOONFUL, SIMPLY DECREASE THE AMOUNT OF FLOUR AND INCREASE THE AMOUNT OF WATER.
